This coffee is another versatile coffee. I've enjoyed it over ice, brewed with a Chemex with a paper filter and with a metal filter, as well as an Aeropress and I have yet to be disappointed! It is a bright and lively coffee with enough acidity to notice (think green grapes) but a balance of mellow and rich, syrupy undertones.
Located in the Sierra Madre, Finca Nueve Linda is a 74,000 hectare Specialty Coffee Estate owned by Don Octavio Moguel Farrera. The farm sits between 1,250 and 1,550 meters and produces "strictly high grown" or SHG beans. They are processed using the European Process (EP), a hand process of removing defective beans based on stringent guidelines.
In 2012, Finca Nueva Linda was among the Cup Of Excellence winners for Mexico.
Preparation Recommendations: This coffee is best when brewed with a bit more water, so I recommend an 18:1 water-to-coffee ratio. Over ice, I'd shoot for a 14:1 ratio.
